Laurie Nicholls
Laurie has spent his life surrounded by good food and good wine. Countless graduates are lucky enough to have called him their mentor, as he passed on his wealth of knowledge to his students in Commercial Cookery at TAFE (Port Macquarie) for many years. Laurie enjoyed keeping his skills current by getting out of the classroom and into our kitchen so much, he’s now our Training Manager, overseeing our training program across both bakery and cafe. Having worked as an executive chef in five star establishments, Laurie initially trained in classic french cooking, but can turn his hand to pretty much anything.
