Bottled Culture: Shmu and Zoe
Zoe and Shmu are Bottled Culture’s fermenters. Their produce is organically grown at home, then prepared for fermentation in a commercial kitchen on their property. The business is a result of a market garden grown by the couple, who found they had too much produce for too few markets, The progression to fermenting what they grew and picked was an obvious choice and draws from Shmu’s Middle Eastern background. The result is a range of modified recipes utilising fresh seasonal – and local – produce, such as a fermented sweet potato hommus and a fermented babaganoush along with various versions of sauerkraut, pickles, and ‘slaws’. It’s a delectable banquet of colour and flavour!
